Maindishes

I have made these meatballs dozens of times.
Very very good and easy to freeze too.
Everyone loves these

Barbequed Meatballs

3 lbs ground beef
1 12 oz can evaporated milk
1 cup oatmeal
1 cup crushed crackers
2 eggs
1/2 cup chopped onion
1/2 tsp salt
1/2 tsp pepper
2 tsp chili powder

Mix all and form into balls.
Put into 12x13 pan.
make sauce sauce
2 cups catsup
1 cup brown sugar
1/2 tsp liquid smoke
1/2 tsp garlick powder
1/4 cup chopped onion

mix all.
pour over meatballs.

bake at 350 for 1 hour. These freeze very well unbaked, or baked.

Helens Sloppy Joes

3-4 lbs ground beef
2 large onions chopped
1/2 a bunch of celery chopped

cook all in dutch oven till done-drain fat off
add
2 big cans of crushed tomatoes
one whole bottle of ketchup
1/2 c brown sugar
1/4 c vinegar
4 T worcestershire sauce
2 T garlick powder
5 T mustard
2 t paprika

simmer one hour.
This made a dutch oven full

Helen and Les's Chili
3 lb ground beef
2 large onions
1 large green pepper

saute all in dutch oven -drain fat off

add 2 big cans diced tomatos in juice
2 cans red kidney beans
1 can rotel tomatos
1 small can tomato paste
1 envelope chili mix
salt pepper
1 c cold coffee 2 T sugar
this makes the dutch oven nearly full

SIMPLY GREAT CHICKEN

1 broiler-fryer chicken (3 1/2-4 lb.), cut up and skin removed
(I used bone-in split chicken breasts-about 3 1/2 lb.)

1 (.7 oz.) envelope dry Italian salad dressing mix
(such as Good Seasons)

1/2 c. packed brown sugar

Place chicken in a single layer in a greased 13x9x2-inch baking dish.

In a small bowl, combine dry salad dressing mix
and brown sugar;

sprinkle over chicken
.
Bake, uncovered, @ 350 degrees for 55-60

minutes or until juices run clear. 4 servings.

Salisbury Steaks

1 lb. ground beef, lean meat
2/3 to 3/4 cup bread crumbs
1 egg 2 tablespoons catsup
2 tablespoons Worchester sauce
2 tablespoons water
2 tablespoons onion, finely chopped
1 can cream of mushroom soup
1/4 to 1/2 can milk or water
2 to 3 tablespoons oil
2 to 4 tablespoons flour
salt- pepper to taste

Mix the above together and shape in to a patty.
In a skillet add the oil and warm.
Take patties and lightly dust in flour. Then add patties to skillet and brown on both sides.

Drain the fat from the skillet putting back the patties.

Mix soup with the milk or water mixing well then add this mixture to the patties in the skillet and simmer for 30 minutes.

drain and add bottle of bbq sauce.
pull meat apart.

Lemon Chicken Scaloppine
(Make Ahead)
2 lbs chicken breasts, 1/4" thick
1/2 c all-purpose flour
2 tsp garlic salt
1/2 c butter or margarine
6 lemon slices
1 tsp instant bouillon
1/2 c hot water
2 Tbsp lemon juice **Optional:
If necessary, pound chicken until 1/4" thick.

Stir together flour and garlic salt; coat chicken with flour mixture.

Melt butter in large skillet; brown chicken over medium heat approx 5 mins on each side.

Place chicken in ungreased baking dish, 13 x 9.

Top each piece with lemon slice (or place lemon slices on chicken at serving time).

Cover and refrigerate if making ahead.

Heat oven to 350 degrees.

Dissolve bouillon in water. Add lemon juice; pour over chicken.

Cover and bake 25 to 30 mins. 6 servings

Kielbasa with Pasta"

1 LB.Smoked Kielbasa ,cut into 1/4 inch slices (I used turkey Kielbasa)
1/2 c. chopped green pepper
1/4 c. chopped onion
1/2 tsp. minced garlic
2 TBSP. Oil
2 cans(14-1/2 oz.) cans Stewed Tomatoes (1 can regular, 1 can Rotel)
1 pkg.(9oz.) pasta
1/2c.grated Parmesan cheese (I probably used a cup of fresh)
2 Tbsp,butter melted

In a large skillet, saute the Kielbasa ,green pepper,onion & garlic in oil until Kielbasa is lighty browed.

Stir in tomatoes.Bring to a boil .Reduce heat;simmer,uncoved, for 10 min.

Meanwhile,cook pasta according to pkg directions.
Drain.

Stir in Parmesan cheese & butter
.Serve with Kielbasa mixture. 4 servings **

I started mine on the stovetop then add to crockpot on low. Then made pasta before serving!

Goulash
oh this is goooood so easy

Ingredients
2 Lbs. Ground Beef
1 Lbs.Elbow noodles
29 oz.Can of Tomato Sauce
1-Large Onion, chopped
1-Large Green Pepper, chopped or two

Preparation Brown ground meat with chopped up onion and green pepper.
Boil elbow noodles until ALMOST soft.
Drain grease from ground meat, onion, and green pepper.

Mix ground meat and noodles with tomatoe sauce

-slow cook till noodles are soft.

Chuck Wagon Beans-

love them

1/2 lb bacon
3 lbs ground beef
3 cups chopped onion
1 cup chopped celery
2 beef bouillon cubes
2/3 cup boiling water
2 cloves garlic
1 1/2 c catsup
3 tbs. mustard
1 1/2 tsp salt and pepper
1 29 oz. can baked beans

brown beef with onions garlic and celery. dissolve boullion cubes. stir everything into meat.

bake bake for 1 hour. or simmer on stovetop.
fry bacon and crumble on top.

THIS TATER TOT CASSEROLE IS SO EASY-
AMY LOVES

Tater Tot Casserole
2 lbs thawed hamburger
1 chopped onion
Mix and put into 9 x13 pan top with
1 can cheddar cheese soup.Thin soup with a little water.
Top soup with
1 32 oz bag of tater tots.
bake 350 for 1 hour

Chicken Cashew Casserole

1 c. cooked chicken, cut up (or turkey)
1 can undiluted cream of mushroom soup
2 tbsp. tomato paste
1 1/2 c. celery, coarsely cut
I added tiny chopped carrots.
whole onion
8 oz sour cream.
pour 1 stick butter over top
1/4 lb. cashew nuts, chopped (salted
30 crumbled crackers ( Ritz)
Salt & pepper to taste

Mix all ingredients (except crumbs).
Place layers of mixture in 1 1/2 quart dish alternating with layers of 2 cups of crumbs, ending with crumbs on top.
Bake uncovered for 40 minutes at 325 degrees.
Makes 5 to 6 servings

Baked Spaghetti

the Best STUFF. WE LOVE IT.
easy to make

2 Lbs ground beef
1 large onion, diced
2 cloves garlic, chopped
28 oz can diced tomatoes
29 oz can tomato sauce
2 tsp seasoned salt
1 tsp salt 1/2 tsp garlic powder
1/2 tsp pepper
3 tsp Italian seasoning
1 1/2 tsp sugar
2 Tbsp dried parsley
16 oz cooked spaghetti
2 cups shredded cheddar
1 cup shredded Montery Jack

Brown Ground Beef , onion, garlic and seasoned salt in a large stew pot. Drain.

Add tomatoes, tomato sauce, salt, garlic powder, pepper, Italian seasoning, sugar and parsley.

Bring to a boil. Reduce heat and simmer,

Cook pasta according to package directions.

Cover bottom of a deep 13x9 casserole with a thin layer of sauce , just enough to keep it from sticking. Add a layer of pasta and cover with 1/3 of the cheddar and 1/3 of the Montery Jack. Repeat layers of sauce, pasta and cheese. Add final layer of sauce.
350 for 45 min
Bake until cheese is melted and bubbly, about 5 more minutes

Helen's Lasagna
THIS IS SO EASY AND VERY VERY GOOD

1 lb hamburger
chopped onion
8oz box lasagna noodles
1 16 oz jar spagetti sauce
cheddar cheese to taste

Cook noodles according to directions and drain brown hamburger and onion,
mix in the spagetti sauce.

layer sauce-cheese-noodles repeat

bake 350 for 1 hr.

This is so easy and takes a very few ingredients. It is very good.

RITZY CHICKEN CASSEROLE-
very very good

8 oz. cream cheese
1/2 C. sour cream
2 (10 3/4 oz.) can cream of chicken soup
6 . diced cooked boneless chicken breasts---I used 7.. made 8 cups chunked chicken
2 roll Ritz crackers (50 crackers)
2 sticks melted butter

Soften cream cheese. Add sour cream, soups, chopped onion and chicken.(I boiled the chicken first)
Pour into a 9 x 13-inch ovenproof baking dish.

To make topping, crush crackers to make crumbs. Combine with butter. Sprinkle over chicken mixture. Bake 350 for 30-40 min.

Mushroom Pork Tenderloin

2 pork tenderloins (1 lb. each)
1 can golden mushroom soup
1 can cream of mushroom soup
1 can French onion soup
Hot mashed potatoes, optional

Place pork in a crockpot. In a bowl, combine soups; stir until smooth.
Pour over pork.
Cover and cook on low 4 to 5 hours or until meat is tender.
Serve with mashed potatoes if desired. This makes its own gravy.

Hamburger Gravy

1 lb ground beef
1 can cream of mushroom soup
1/2 cup milk
1 can pieces & stems mushrooms (drained)
1 1/2 tsp beef bouillon granules
3 cups hot mashed potatoes

In a large skillet, cook beef over med heat till no longer pink; drain. Stir in the soup, milk, mushrooms and bouillon. Reduce heat. Simmer, uncovered for 10-15 mins till heated thru, stirring occasionally.

Serve over mashed potatoes.

Bean Soup
we both love this alot

1 lb white beans
1 meaty hambone or 2 hamhocks
3 quarts water
3 onions chopped
3 cloves garlic chopped
4 stalks celery chopped with leaves 1 or 2 c carrots
salt pepper to taste
3 or spoons of ham seasoning

Strain water from beans, put in big pot with 3 qts water and ham.
Boil, reduce heat simmer for 2 hours.
Stir in chopped vegetables .
Cook til tender-one hour simmer.
Remove ham,cut in small bits. Return to pot.
Discard bone.

1 bag of beans about
3-4 slices thick cut bacon chunked in 1 inch squares
cover with water about 3 inches.

cook low for an hour or two.

Amys Party Potatoes

32 0z. hash brown potatoes thawed
1/4 cup chopped onion
1 cup sour cream
1 can cream of chicken soup

1. mix all and put into greased casserole or 9x13 pan.
2. spread small jar of cheeze whiz or softened velveeta on top.
3. combine 2 cups of crushed corn flakes with 1/2 stick of melted butter. spread on top.
4. pour another 1/2 stick of butter over all.
bake at 350 for 40 minutes.

Hashbrown crockpot taters WITH HAM

great for breakfast for a crowd

1 32 oz bag of frozen hashbrowns
1 stick of melted butter
1 8 oz. sour cream
1 can cream of chicken soup
1 small onion chopped cubed ham(not in the recipe, but I added it myself)
1 bag of shredded cheddar cheese

Just mix it all together. You can put in in the oven at 350 for about 30 minutes, but I like to do the crock pot instead.

SO GOOD

Crockpot Pizza
1 1/2 lbs hamburger browned with onions
16 oz. cooked rigatoni
1 lb. mozzerella cheese
1 can cream of mushroom soup
1 qt. pizza sauce
1/4 lb. thinly sliced and diced pepperoni
2 cups cheddar cheese

split everything in 1/2 layer in the crockpot in order given cook on low for 4 hours. do not over cook. this is great with garlick bread and salad.

JUST HEAVENLY

HEAVENLY GROUND BEEF CASSEROLE

2 lb. ground beef
2 t. minced garlic
1/2 t. salt
28 oz. tomato sauce
1 can (4 oz.) diced green chilies, optional
8 oz. cream cheese, softened
1 pt. sour cream
1 c. chopped onions
1 lb. egg noodles
3 c. shredded mozzarella cheese

Brown ground beef until done. Then add garlic, salt, green chilies and tomato sauce.
Simmer for 30 minutes.
While that simmers, mix together cream cheese. sour cream and onions.

Cook noodles.
In a pan 9x13 that has been sprayed with a non-stick cooking spray,
Layer: 1/3 of sauce, 1/2 noodles, 1/2 cream cheese mixture, 1/2 mozzarella cheese,
cover with 1/3 more sauce , remaining noodles, cream cheese, mozzarella cheese and sauce.

Bake at 350, uncovered for 30 minutes
Remove from oven, cover and let sit for 10 min. before serving.

Green Pea Casserole

1 cup chopped onion
1 cup chopped celery
1 cup chopped green pepper
1 16 oz can green peas--drained
1 can cream of mushroom soup
1 8 0z. can water chestnuts
1 cup soft bread crumbs

melt butter in saucepan over low heat, add onions, celery, and green pepper. cook over low heat untill tender. remove from heat. Add remaining ingredients except the bread crumbs. bake at 350 for 30 minutes or untill hot and bubbly and crumbs are browned.

MEXICAN MACARONI

8 oz mac noodles cooked and drained
8 oz sour cream
1 can rotel tomatoes/chilies
1 can cream of mushroom soup
5 oz can chopped green chilies
4 oz montery jack cheese grated
4 oz chedder cheese grated

combine all, except half of cheeses and pour into 9X13 pyrex dish.
add remainingcheese to top and
BAKE at 350 for about 30 min.
I have just popped into the microwave and it was wonderful

Simply Sour Cream Chicken Enchiladas

1 or 2 lb chicken breasts, diced
1 large onion, chopped
1 tablespoon vegetable oil
8 (8 inch) flour tortillas, softened
10 1 1/2 cups grated monterey jack cheese or Mexican blend cheese, divided
1 stick butter
1/4 cup flour
1 (15 ounce) can chicken broth
1 cup sour cream
1 (4 ounce) can chopped green chilies
1 can rotel

In frypan, cook chicken and onion together in oil over medium-high heat until chicken is done.

Divide cooked chicken between 8 tortillas;
add 1 1/2 tablespoons cheese to each tortilla.
Roll enchiladas and place seam-side down in 9x13" baking dish that has been lightly sprayed.

Melt butter in a medium saucepan; stir in flour to make a roux; stir til bubbly;

whisk in chicken broth then bring to boiling, stirring frequently.
Remove from heat;
stir in sour cream and green chiles; pour sauce evenly over enchiladas.
Top with remaining 3/4 cup cheese (baking dish may be double-wrapped and frozen at this point) and bake at 400° for 20 min

this is my old fashion bread stuffing that I have made for years.

Helen's Bread Stuffing

2 large onions diced
2 c diced celery 2 c butter
SAUTE in dutch oven when onion is tender

ADD 10 cups homemade bread torn up
2 tsp salt-sage-thyme-pepper

MIX put in casserole and
bake till hot. can add giblets if desired. If too dry add some broth.

Crockpot Cornbread Dressing
did this for thanksgiving was great-
Cook: 4 hrs on LOW

4 1/2 cups cornbread crumbs
1 (16-ounce) package herb stuffing mix
2 (10 3/4-ounce) cans cream of chicken soup
2 (14-ounce) cans low-sodium chicken broth
1 medium onion, chopped
1/2 cup chopped celery
4 large eggs
1 tablespoon rubbed sage
1/2 teaspoon salt
1/2 teaspoon pepper
1 stick butter melted and mixed in

Stir together cornbread crumbs, stuffing mix, and next 8 ingredients in a large bowl. Pour cornbread mixture into a lightly greased 5 1/2- or 6-quart slow cooker. Dot with butter.

Rice Krispie Sweet Potato Casserole

this was loved

1 large can and 1 small can sweet potatoes, drained, to equal 3 cups.
1 cup granulated sugar
1/2 cup melted butter
2 eggs, well beaten
1 teaspoon vanilla
1/3 cup milk
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon

Combine all ingredients and spoon into a greased casserole dish.
Topping: 2 cups Rice Krispies
1 cup chopped pecans 1-cup brown sugar 1 stick butter, melted
Combine all ingredients and spoon over casserole, and pack down slightly.
Bake for 20 minutes in a reheated 400-degree oven.
Topping will be browned.

Avacado Dip
1 jar picanti sauce
1 container avacado dip
1 container sour cream
1 can refried beans
chopped lettuce
tomatoes
green onions
shredded chedder cheese

layer in cake pan serve with tortilla chips.

Crumb Coated Chicken Thighs

1/4 Cup dry bread crumbs
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon curry powder
1/4 teaspoon pepper
8 chicken thighs, skin removed

In a large resealable plastic bag, combine the first seven ingredients. Add chicken, a few pieces at a time, and shake to coat. Place the thighs on a baking sheet coated with nonstick cooking spray. Bake, uncovered, at 400ºF for 20 minutes. Turn chicken pieces; bake 15-20 minutes longer or until a meat thermometer reads 180ºF.
Yield: 4 servings
